Olive oil is very sensitive to heat and gets oxidized quickly. Olive oil is green till it gets oxidized then turns to shades of brown or yellow but they package it in dark colored bottles so you cannot tell the color of the oil when you buy it. Just imagine the shipping time and the heat quotient on those ships. What we are getting is oxidized oil, which is bad for the body. Have you ever tasted olive oil that is green and non-oxidized, it is DELIGHTFUL in comparison to what we get!
I recommend freshly pressed flax seed oil on your salads or sesame seed oil. Both should be purchased from a wood oil press company. Do not use olive oil, especially the extra virgin variety for cooking.
