We have a tendency to over cook our greens, I am talking about the leafy ones like spinach, fenugreek (methi), dill (sepu), amaranth leaves (rajgira) etc. Once the leaves change colour they lose their nutrients completely. If you cover the pot while cooking or serving, the greens will turn black so avoid this. Eat your greens as soon as they are cooked. Never re-heat vegetables, it’s better to eat them cold if need be.
